You can start the weekend with a breakfast or snack that will delight those with a sweet tooth if you take note of this recipe for mini croissants or donuts with oatmeal and kefir , they are a delight, and the best thing is that they are easy to make and also, they are healthy . We make them without sugar, whole grain oats is one of the best sources of carbohydrates that we can take, it also has ground almonds, hazelnut oil, kefir, chocolate with a percentage of cocoa of more than 72%…
The molds we use have six cavities, one in the shape of donuts or donuts (we leave you a link below so you can see the model) and another in the shape of a croissant, they are made of silicone and therefore, we can use them in the microwave . And that is where we make these mini croissants or mini donuts with a sponge texture , and two minutes of cooking are enough. The dough is also made in a few minutes, what takes longer is waiting for them to cool down.

Ingredients (8-10 units)
- 2 eggs L
- 10 grams of hazelnut oil
- 100 grams of creamy kefir
- a few drops of vanilla extract
- 80 grams of ground oatmeal
- 50 grams of ground almond
- 1 heaping tsp baking powder
- 45 grams of erythritol (or the equivalent in sugar)
- a pinch of salt.

- 100 grams of dark chocolate (72-85% cocoa)
- 20 grams of hazelnut oil
- 20 grams of creamy kefir.
Elaboration
For the mass
Put the eggs, hazelnut oil, kefir and vanilla extract in a bowl. Beat with the rods until all the ingredients are well integrated. Then add the oats and ground almonds, the baking powder and the desired sweetener. Also add a pinch of salt to enhance the flavor and beat again with the rods until you get a creamy and slightly dense dough .
Brush the silicone molds (for mini croissants and/or mini donuts) with a little extra virgin olive oil and pour the dough, filling ¾ of each cavity. Set the dough well by lifting the mold a little from the work table and letting it fall firmly.
Put the mold in the microwave and program 2 minutes at maximum power , in our case 900 watts. Check that the dough is cooked, the time can vary a few seconds from one microwave to another, and also depending on the mold used, how much it has been filled… When the oatmeal and kefir biscuits are ready, let them cool before unmolding.

Melt the chocolate with the hazelnut oil in a water bath or in the microwave, when it is shiny and creamy, add the creamy kefir little by little and mix well.
Cover the mini croissants or donuts with the melted chocolate with kefir only on the top. You can add a little chocolate noodles, granulated almonds… if you want to give it more texture and flavor contrast. Let cool in the refrigerator.
Finish and presentation
When the chocolate has hardened (although it will still be slightly creamy), your healthy treats are ready to eat. And if there is something left over, you should leave them in the least cold place in the refrigerator to keep them. Enjoy your meal!
